I’ve been reading for days trying to figure out the best way to rip my Blu Ray disks to my computer so that I can watch them from Plex. While I’ve sorted out the actual Plex part of things, I’m wondering how people have figured out the ripping process.
MetaX and/or iDentify Subler remux Quicktime, which is now built into Mac OS X. Chaptermerge, a script I wrote that merges chapter files together. The proces: Rip both movies from their individual DVDs using Handbrake or whatever other tool you’re using. Be sure that you’re adding chapter markers. The short answer to “is there a direct alternative” would be no. The longer answer would be depends on how many features of Subler do you actually need.
Right now, I have been using MakeMKV to create a high def version of the movie. I was leaving both the English subtitle checkboxes checked and the nested English (forced only) checkboxes checked. If there were three sets, I was leaving them all checked.
After the MKV was created, I was heading into Handbrake to encode the MKV into an mp4 to play on my Apple TV 4. I was using the Apple TV 3 preset, but changing the fps to “same as source.” I was not making any changes in the audio tab.
While this process worked for the most part, I’m betting you all can figure out where I’ve run into trouble… If you guessed subtitles, you guessed right. I was watching 2012 and noticed that any time they were speaking in a foreign language, there were no subtitles. After more googling, I’ve found some great walkthroughs for PC/Windows users, but I’m on a Mac and many of the walkthrough instructions used Windows-specific software, especially for the subtitles. I did find the compiled binary of MKNToolNix, but the walkthough I was following was using MKVExtract and I couldn’t sort out how to do the same thing in Toolnix. I also downloaded MKV Tools, but couldn’t find instructions on how to find the sizes of the subtitles (all the walkthroughs say that the smaller file size is the one with forced subtitles).
So, I went back and created a new MKV with MakeMKV, checking off only the (forced only) English subtitle options (and unchecking the “English” option above forced only). I opened that new MKV up in VLC and it was showing only the forced subtitles… However after re-encoding it in Handbrake, even after going into the audio tab of handbrake and selecting the subtitle track (there was only one showing up for handbrake and in the subtitles section of VLC), choosing Burn, etc… I watched the MP4 and… no foreign language/forced subtitles.
My NAS doesn’t have a ton of transcoding capability, which is why I’m hoping to burn forced subtitles into the MP4, but I’m getting frustrated.
Does anyone have a better walkthrough than this for Mac systems? A tutorial I could follow that has better luck getting those foreign language subtitles in?

HandBrake doen't (yet) have an autopassthru option for subtitles. It's kind of a difficult thing to do properly. With audio, when passthru is not possible, we can convert to a universal intermediate format (raw PCM samples) and re-encode to a format compatible with the container. My problem is the file size. These Blu Ray discs were created using MP4s, couple with separate files that had the subtitles.
